Where to base yourself on the mainland — the cities behind the islands.
Greece's mainland splits into two very different cities: Athens (the capital, ancient ruins stacked next to rooftop bars, 2–3 days) and Thessaloniki (the food-and-nightlife city up north that most first-timers skip and shouldn't, 2 days). Most trips use Athens as the gateway before island-hopping; Thessaloniki rewards travelers who've already done the postcard version of Greece once.
Everyone comes to Greece for the islands, which is fair — but treating the mainland as a pure layover between the airport and the ferry is how you miss half the country. Athens alone is worth more than the one rushed afternoon most itineraries give it, and Thessaloniki barely makes it onto foreign radars despite being, by a wide margin, the country's best food city. Here's an honest take on both.

Athens
2–3 days, stay in Plaka or Koukaki — walkable, and the ruins are right there.

Thessaloniki
2 days, arguably Greece's best food city, and far fewer tourists.
